The Royal Plaza's restaurant Carousel will be dishing up Moorish cuisine from Southern Spain, between July 21 and August 18, 2012. Distinguished Spanish guest chef, Esmeraldo Oteruelo, has been asked back to present a sumptuous feast for Carousel's buffet: Carrillera de Ternera Tajine (Moorish-style veal cheeks), Tajine de Pisto Manchego (vegetable stew), and seafood in a number of delightful preparations, from Paella Morisca (Moorish seafood paella) to Lubina Charmula (charmula seabass) to Vieras Mozarabes (sea scallops with saffron sauce).
Chef Esmeraldo's culinary experience spans the globe, having served in kitchens from Switzerland to Indonesia. Seafood is his main stock in trade, and his work exemplifies his belief in simplicity in preparation, all the more to retain each dish's natural sweetness and freshest flavors.
