Ikan bakar (quite literally “burnt fish” in Bahasa Indonesia) is a classic Malay seafood dish. Quite simply, it’s a large fish like snapper, butterflied and seasoned before being grilled over a fire of burning coconut husks. In the image above, Menega Café’s cooks are winding up the grilling process.
