Yee sang (spelled yu sheng in other areas) is a raw fish salad that's become the center of a fun New Year tradition for many families. Each ingredient and each step in the dish's preparation has a specific meaning attributed to it. The finale is fun, albeit messy: "Tossing the ingredients high up in the air brings good luck for the year," Lingzie explains. "And the raw fish served in this dish also symbolizes abundance."
The ingredients in yee sang take some doing to prepare, so many Chinese settle for having their yee sang in restaurants, or buying yee sang in the supermarket (a fairly recent development). The raw fish, however, is not included, which means you'll have to get it yourself.
